You’ve seen these trendy treats all over TikTok, but we’ve got our own secret up our sleeves…MAYO! This yummy corn rib recipe is perfect for adding to school lunches or to have a bite in-between meetings at the office!

Ingredients:
4 ears of corn
3 tbsp Mayo vegan or normal
2 Cloves Garlic skin on
1 tsp Vegan Margarine or Butter
Green Sauce:
5 g parsley
5 g coriander
½ clove garlic
2 tbsp olive oil
Juice of ¼ lime
Sticky Chilli Sauce:
2 Tbsp Chilli sauce such as sriracha or tabasco
1 Tbsp Maple Syrup or Honey
Method:
Half fill the Instant Pot Duo Crisp with boiling. Add the peeled corn, garlic, a large pinch of salt, and the vegan margarine or butter.
Secure the lid and select Pressure Cook, and set the time for 2 minutes. When the cooking program has finished, quick release the pressure.
(If you do not have a Duo Crisp, and only have an Instant Vortex, you can boil your corn with the garlic and butter as directed above on the hob. Boil for about 8-10 minutes until the corn is just softening, and the garlic is squishy.)

Drain the corn and once cool enough to handle, trim on either end to make a flat base. Stand the corn upright on a board, then use a sharp knife to cut down the centre of the corn husk. Repeat with the two halves to yield 4 corn ribs per ear of corn. Repeat until all the corn is cut.
Wipe the inner pot dry, and using the Air Fryer lid on the Duo Crisp, select Air Fry for 16 minutes at 205°C.
While the Duo Crisp preheats, remove the soft boiled garlic from the skins, and use a knife to smush it into a paste. Add the garlic paste to your 2 Tbsp mayonnaise and mix well. Baste the ribs in garlic mayo, sprinkle with salt, then place in the double layer fryer basket.
Place the basket into the Duo Crisp and cook until crunchy and brown, about 14-16 minutes. If the corn in the middle basket doesn't brown as fast, place it on the top of the basket and cook it a little longer.(If you do not have a Duo Crisp, and only have an Instant Vortex, select Air Fry and set the time to 12 minutes and the temperature to 200°C and press start. When the Vortex has pre heated, place the corn ribs into the frying basket and cook until golden brown and crisp (timings will vary between models)
To make the sauce/sauces:

Green sauce: chop the parley and coriander finely. Add to a bowl, then grate in the garlic. Cover with 2 Tbsp of oil, then season with salt and pepper to taste. Sticky Chili: Mix the maple/honey and chilli sauce together.
Once the corn ribs have cooked, drizzle over your sauce of choice (or both sauces!), and serve immediately.
