Roasted Potatoes

Fluffy on the inside, golden and crispy on the outside – with a buttery, herby twist!

Ingredients
5 large potatoes
2 sprigs of rosemary
4 sprigs of fresh thyme
5 garlic cloves
100g garlic & herb butter
Salt
Pepper
Chives (for garnish)

Instructions
Peel and quarter the potatoes.
If using smaller potatoes, halve them instead.

Pressure cook in the Instant Pot Duo WhisperQuiet
Add the potatoes to the pot with a cup of water. Pressure cook for 5 minutes (or 3 minutes if using small potatoes). Quick release the pressure.

Drain and season.
Gently toss the potatoes with salt and pepper. Let them steam dry for a few minutes to roughen up the edges (for extra crispiness).

Preheat the Instant Vortex Plus VersaZone Air Fryer.
Add a generous amount of garlic & herb butter to the tray and let it melt at 200°C.

Air fry/roast in two stages:
Roast the potatoes for 15 minutes, then remove and gently turn them.
Add the rosemary, thyme, and crushed garlic cloves, then roast for a further 15–20 minutes until golden and crisp.

Garnish and serve.
Sprinkle with freshly chopped chives and enjoy immediately.
