The perfect winter dessert! To this day I’m still completely amazed by a chocolate self-saucing pudding. It looks like any other normal chocolate cake, but when you dish into it, chocolate sauce, covering the bottom of your dish! So decadent and delicious!
Ingredients
For your cake batter:
¼ cup milk
2 tbsp veg oil
1 tsp vanilla
½ large egg
½ cup flour
3 tbsp cocoa
1/2 cup sugar
½ tsp baking powder
½ tsp baking soda
Pinch of salt
¼ cup boiling water
For your sauce:
1 ½ tbsp cocoa
¼ cup brown sugar
½ cup boiling water
Instructions
In a mixing bowl, whisk together all your wet ingredients, apart from your boiling water.
Note: The standard baking measurement for an egg is large, however, you don’t want too much batter in your dish – you also don’t want too many rising agents, so that it ends up overflowing. To weigh out half an egg, whisk your egg separately, then measure out hal – a bout 2 tbsp – and add it.
Sift in your dry ingredients, and fold your batter through.
Lastly, add and gently fold or whisk through your boiling water. Pour into your baking dish, which should be roughly 18-20cm, to be able to fit into the Instant Pot.
In a separate bowl or jug add the cocoa powder and brown sugar for your sauce and mix. Evenly distribute over your batter in your baking dish. Then, pour the boiling water over the back of a dessert- or tablespoon over the sandy mixture. This helps to soften the fall of the water and evenly distribute it, without it sinking right through one spot to the bottom of your batter and dish.
Cover your dish with foil.
Insert the trivet into the Instant Pot, add 1 cup of boiling water, and then your covered baking dish.
Seal the Instant Pot, set to pressure cook – high pressure – for 20 minutes. Once the time has lapsed, allow a 15-minute natural pressure release.
Cancel the cook time, release any excess pressure and remove your cake from the Instant Pot. Remove the foil, dust with icing sugar and you should have a perfectly cooked cake when you dish into it, and the most decadent chocolate sauce on the bottom.
Serve immediately with a scoop of ice cream and enjoy!
Note: For more of a traditional cake than a pudding, bake it in your vortex or airfryer without covering for optimal results.
