Ingredients
500 g (1lb) chicken breasts
1 cup flour
2 eggs beaten
2 cups panko breadcrumbs
1 tsp salt
1 tsp smoked paprika
1 tsp garlic powder
1 tsp dried oregano
1 tsp pepper
For the Jalapeño Ranch
½ cup sour cream
½ cup mayonnaise
1 tbsp Jalapeños chopped
2 tsp dill finely chopped
1 tsp parsley finely chopped
2 tsp chives finely chopped
1-2 tsp lime juice
salt and pepper to taste
Instructions
Slice the chicken into bite size chunks.
Place the flour, eggs and panko breadcrumbs in separate shallow bowls. Season the flour with salt and pepper. Season the breadcrumbs with the spices.
Coat the chicken in the flour, then in the beaten egg and finally in the breadcrumbs mixture. For a thicker coating, repeat the egg and breadcrumb steps.
Place the chicken pieces in a single layer in the basket of an air fryer then drizzle or spray with olive oil.
Cook the chicken at 200ºC/390ºF for 15 minutes, turning half way through.
Finely chop the herbs and place in a bowl. Mix in the mayonnaise, sour cream, lime juice, jalapeños, salt and pepper. Taste and adjust seasoning if necessary.
Remove the popcorn chicken from the air fryer then serve with the ranch and lime wedges.
