Chicken wings
Flour
Eggs
Panko breadcrumbs
Spices: Garlic powder, onion powder, ground ginger, smoked paprika, cayenne pepper, salt and black pepper.
Olive oil
For the sauce:
Soy sauce
Brown sugar
Lemon juice
Rice vinegar
Method:
Bread the chicken: Combine the flour with a teaspoon each onion powder, garlic powder, smoked paprika and salt. In a separate bowl, combine the bread crumbs with the same spices and whisk the eggs in a separate bowl. Coat the chicken first in the flour, then in the beaten egg and finally in the bread crumbs. Press the crumbs into the chicken to thoroughly coat each wing.
Air fry: Place the chicken wings in a single layer in your air fryer basket. Spray or drizzle with olive oil then air fry at 205°C/400°F for 20 minutes, turning over half way through cooking, until the chicken is crisp and golden and cooked through.
Make the sauce: While the chicken is cooking, combine all the sauce ingredients in a small saucepan set over medium-high heat. Allow to simmer for 10 minutes until the sauce has reduced slightly.
Serve: Toss the cooked chicken wings in the sauce and serve immediately.
