Chicken Alfredo Pasta

"Deliciously creamy chicken Alfredo pasta made effortlessly in the Instant Pot Duo - a quick and satisfying weeknight dinner that will leave your taste buds craving for more!"
 
Ingredients:
2 chicken breasts
1tsp olive oil
Seasoning Mix – season the chicken olive oil and half of the seasoning mix;
1 tsp salt
1 tsp paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp cayenne pepper (if you want it spicy)
1 tsp black pepper
1 tsp oregano
 
300g fettucine – cooked for 3 minutes, on the pressure cook mode on your Instant Pot Duo
1 tsp olive oil
1 tbsp butter
Chopped chilli to taste
2 cloves of garlic finely diced
1 tbsp flour
½ cup parmesan cheese, and more for topping
200ml chicken stock
Chopped parsley
 
Method:
Turn on the sauté function of your Instant Pot Duo, add the chicken on both sides until cooked.
Remove and set aside. Add the butter, chilli and garlic then flour – stir to form a roux.
Add in the chicken stock, and remaining seasonings and stir. Once the stock comes to a gentle boil add in the cream and allow to thicken. Add the cooked pasta, cheese and chopped parsley.
Empty into a bowl, slice up the fried chicken and lay it over the pasta, top with more cheese and parsley.
