Chicken:
600g chicken thighs or butterflied breasts, boneless & skinless
2 tbsp olive oil
Juice of 1 lemon
1/2 tsp ground all spice
1 tsp ground coriander
1 tsp paprika
1 tsp ground cumin
1 tsp salt
1 tsp sumac
1/4 tsp black pepper
Pinch of turmeric
Rice:
2 cups rinsed Basmati rice
2 1/2 cups chicken broth or water
2 tsp chicken stock powder if you are using water
2 tbsp butter
1 tbsp oil
2 cloves chopped garlic
1/2 tsp turmeric
1 tsp dried oregano
1/2 tsp ground cumin
1/2 tsp salt
1 bay leaf
Method:
In the Instant Pot gently sauté olive oil, butter, garlic and spices. When the spices are fragrant, then add your drained rice and let your spice mixture coat your rice, cancel sauté. Add in your water/broth, stir. Pressure cook, on high for 10 minutes. Allow Natural Pressure Release for 12 minutes. Release remaining pressure, once done, fluff up your rice with a fork.
Pita Chips:
Cut up 3 pita breads into chips, coat with olive oil, sumac and salt. Air fry for 4-6 minutes at 190 degrees
Garlic Sauce:
1/2 cup mayonnaise
4 finely grated cloves of garlic
2 tbsp yoghurt
1/4 tsp black pepper
2 tsp lemon juice
1 tsp sugar
2-4 tbsp water
pinch of salt
Shake Shake Shake
Assemble with lettuce, tomatoes, onions and sriracha.
