“I know I’m late to the party. But I think @instantpotsa is going to be my bestie in the kitchen. I mean I made this entire meal in 40 minutes (including the maize rice)”.
Thank you @chef_nti for the recipe.
Ingredients:
• 400g pork trotter
• 3 cups of water
• 2 cloves garlic, chopped
• 1 large onion, chopped
• 1 teaspoon ginger, chopped
• 3 stalk spring onion, chopped
• 1 teaspoon salt
• 2 tablespoons soy sauce
• 1 tablespoon all purpose spice mix
• 1 teaspoon black pepper
• Vegetable oil, enough to cover the base
• 2 - 3 cup beef stock
• 1 teaspoon habanero chilli, finely chopped
• 1 can broad beans
Method:
1. Start by making sure the trotters are clean. Wash them thoroughly in a mixture of water and white vinegar.
2. Scald trotters in boiling water for 5 minutes then drain.
3. Season with garlic, onion, ginger, spring onion and salt. Rub in the seasoning well. Add soy sauce, all-purpose seasoning, and black pepper.
4. Marinate for one hour. (you can skip this step, but it makes a difference in flavour)
5. Heat pressure cooker and pour in vegetable oil, add marinated trotters and brown lightly stirring constantly.
6. Add beef stock and fasten pressure cooker lid, pressure cook for 25 minutes. Cool pressure cooker thoroughly before opening.
7. Add broad beans and allow to simmer for another 5 minutes.
ENJOY!!!
