"I got to play around with the latest Instant Vortex Oven, so I thought I’d make a batch of my Spider Peanut Butter Chocolate Cookies!"
Ingredients
75g white sugar
40g brown sugar
65g unsalted butter at room temp
130g smooth peanut butter
1 egg
1 teaspoon vanilla essence
95g all-purpose (cake) flour
1/4 teaspoon baking soda
Pinch of salt
±12 Lindt balls
±24 candy eyes
50g chocolate - melted
Instructions
1. Place both sugars, butter & peanut butter in a medium sized bowl then using a handheld mixer, beat on a med speed until nice & smooth
2. Add the egg & vanilla essence & mix for 1 minute.
3. Add the flour, baking soda & salt. Beat on low until well combined.
4. Line a baking tray with baking paper, then roll out small balls of dough (mine were just smaller than a golf ball) & place them on the tray, about 3 inches apart.
5. Use your fingers to gently flatten the dough then bake the cookies for ±10-12 mins at 180°.
6. Remove the tray from the oven then using the back of a teaspoon gently make indents in the middle of each cookie. They should be deep enough to hold a Lindt ball.
7. Take them out the oven & let them cool completely before decorating them.
8. Place the melted chocolate into a small piping bag. Squeeze a small amount of chocolate into the indent of each cookie then place a Lindt ball on top.
9. Attach 2 candy eyes to each ball using a bit of melted chocolate, before pipping spider legs onto the sides of each cookie!
